My wife Krisy made the BEST frozen yogurt in our Vita-Mix blender tonight. It had 1 pound frozen strawberries, 1 cup vanilla yogurt, and 1/8 cup splenda. All you do is put everything in the vita-mix and blend until it is smooth. The strawberries freeze the yogurt and it makes a delicious sweet creamy mixture. We are planning to make this with frozen pineapple and coconut soon! This is an awesome healthy recipe the entire family LOVED! High in protein and fresh fruit makes it a great way to cap off the day! I know the Vita-Mix is expensive, but this alone made it all worth it!
Anyone who knows me knows I live a healthy juicy lifestyle! My friend Shane from running on Juice turned me on to juicing a while back and I have been hooked ever since. I think people are curious about juicing, but are afraid to try it out, and I think thats just silly. You have not lived until you have had a glass of fresh apple juice with NOTHING in it but pure apple goodness! Thats all it took for me. The best news is thats is just the beginning. I have regularly made juices with 7-10 ingredients and when you start doing that you can get some truly amazing flavors, and to be honest about the same prep time as it would take to make toast and cereal.

Lots of people worry about being overly hungry on this kind of plan and I can assure you I was never hungry. In fact, on many days I failed to drink all of the juices in my plan because I was completely full. It was a bit of a cultural adjustment getting used to eating so much produce, but the change was totally worth it. I yesterday made “Spring is in the Air” and it was amazing! This juice has 2 apples, 1 orange (peeled), and 1/2 a pink grapefruit (peeled) and juiced together, then blended with 8 strawberries, a banana, and a handful of ice. I thought it was delicious, but a bit tart, so I made it again with a 3rd apple and it was even better. Thats the wonderful thing about juicing is it is so easy to change a recipe so you always get something you will enjoy. Anyways, I could go on and on about the benefits of juicing and I probably will at some point… But for today I just wanted to make sure people knew about the free e-book and had a chance to get a copy because the recipes I have tried so far were awesome!
Today was a short run only 1.33 miles… but I got to run with Sophia today and we had a LOT of fun. at about 1 mile Sophia stopped in a big field and picked a big bouquet of wild flowers for Krisy. I am really happy with how excited Sophia is to run with me most days. I hope that it will turn into a life long love of exercise (Or college scholarship!). The time we spend together is priceless and I am sure I will look back on it fondly when she is a teenager and too cool for me.
My left leg was a bit tight today, so we took it really easy from and speed and distance perspective. Nutritionally, I had a GREAT day. I had one of Krisy’s Banana Smoothies for breakfast:
Lunch was leftover stir fry I made Saturday night followed by a fresh Juice made with apple, pineapple, carrot, celery, and cucumber with a handful of peanuts and Macadamia nuts. Dinner was a Morningstar Prime Griller and some leftover mac n’ cheese. Finally for desert I had a small glass of fat-free milk and a Kashi oatmeal raisin flax cookie. Over all a GREAT eating day! I feel fantastic 10 days into this, but I need to make sure I take it easy and not to push to hard. A simple injury could kill the dream of running every day for a year.
